It was explained that Afternoon Tea became extremely popular in Victorian times. It evolved into a mini meal to stem the hunger of a late evening meal. Afternoon Tea is still extremely popular today. Queen Victoria herself took part and held tea receptions. She adored cake especially and gave her name to one of the finest of all British teatime cakes – the Victoria sponge. The children worked in mixed groups of six to change a Victoria sponge recipe and keep the same ratio and proportion. They weighed their ingredients and baked their cakes.
